• Mayor of London shares recipe for Cheese on Toast in new cook book
• Celebrities including Pippa Middleton, Gwyneth Paltrow and One Direction, have also contributed recipes to the book in aid of Rays of Sunshine charity
As Mayor of London, Boris Johnson is obviously a very busy man but that doesn't mean that he doesn't have time to eat well, as he demonstrates by sharing a recipe in a new charity cookery book available from Clintons.
The London Mayor's recipe is for an exotic delicacy which Mr Johnson has named "Cheese on Toast" and which consists of melted slices of cheddar cheese on top of toasted bread. In a bold twist to the classic recipe, Boris includes a layer of chutney underneath the cheese.
Boris' simple to follow recipe is as follows:
1. Cut a large amount of cheese, preferably cheddar, into slabs
2. Lightly toast some brown bread
3. Spread toast with butter and chutney
4. Cover toast with slabs of cheese
5. Grill until it gets all nice and scabby.
Alongside Boris Johnson's recipe for Cheese on Toast is a recipe from Gordon Ramsey for Pan Fried Egg with Aubergine Caponata and Anchovy Dressing, and Lorraine Pascal's Aussie Sweetcorn Breakfast Fritters with Avocado and Rocket Salad and Sweet Chilli Jam.
The Morning Sunshine book also includes breakfast and brunch recipes from celebrities including Gwyneth Paltrow (blueberry muffins), Pippa Middleton (full English frittata) and Kate Moss (French toast with crispy bacon and maple syrup), as well as celebrity chefs including Jamie Oliver, Gary Rhodes and Gino D'Acampo
The cookery book is available in Clintons stores nationwide and all of the proceeds go to the Rays of Sunshine charity which grants wishes for children suffering from serious illness.

Rays of Sunshine Children's Charity was formed in 2003 to help children who are living with serious or life-limiting illnesses between the ages of 3-18, across the United Kingdom. The charity's celebrity ambassadors include Simon Cowell, One Direction, JLS and Gordon Ramsey.
In 2013, the Royal Society of Chemistry produced a formula for the perfect cheese on toast, suggesting that 50g of sliced cheese should be placed on a slice of medium sliced white bread and grilled at 115° for four minutes with a distance of 18cm between the toast and the grill. They didn't mention chutney.
